Answers:

1.B- SALMON: Although Salmon does NOT increase HDL cholesterol levels, it is an excellent source of omega 3 fatty acids, which help to decrease inflammation in the body and therefore lower the risk of heart disease. Red wine, psyllium (soluble fiber), exercise, and a healthy body weight have all been shown to increase HDL levels.

2.D-Mile High Pie: This is a dessert pie with a cookie crust that is layered with several flavors of ice cream and crowned with meringue. Persimmon pudding is from New England. Tabasco is the most famed sauce of Louisiana. Wild cranberry ketchup is an Alaskan specialty and pepper pot, also a New England specialty, is a soup containing vegetables, potatoes, and tripe, and thickened with cream and flour.

3.D- Selenium: This trace mineral is important in the human body because it is essential for normal functioning of the immune system and thyroid gland. It also works with other antioxidants to fight against free radical formation. The major dietary sources of selenium are plant foods that are grown in selenium-rich soil.

4.A- Barley: Barley has a glycemic index(GI)=25. Green Beans: GI=30. Lentils: GI=29. Apple: GI=36. Popcorn: GI=55. Although barley has the lowest GI, all the above foods can play a part in a healthy, well-balanced diet.

5.B- Cauliflower: 1cup of raw cauliflower contains 77%DV of vitamin C and only 25calories and 2.5grams of fiber! Carrots are rich in potassium, vitamin A, and lutein (good for your eyes). Eggplant is rich in potassium. Green beans are rich in lutein, potassium, and contain some calcium. Zucchini is rich in potassium and lutein.

6.D-Cottage Cheese: 1cup of Cottage Cheese contains 30grams protein; 3oz of Steak contains 27grams Protein; 2tbsp of Peanut Butter contains 9grams Protein; 1cup of Baked Beans contains 14grams Protein. Meat, poultry, and fish are NOT the only food sources high in protein!
