Fall Harvest Pizza: Butternut Squash and Kale

Warm up on a cozy, autumn night with this delicious and easy pizza!

What you will need: 1 Butternut Squash 1/2 pound Pizza Dough Ball (or any pizza dough) 1/2 bundle of Kale 3 tablespoons of Olive Oil 2 cups of Mozzarella Cheese 3-4 ounces of Goat Cheese Lemon Zest 2 Sprigs of Thyme Red Pepper Flakes to taste Salt & Pepper to taste

Directions: Preheat the oven to 400 degrees Peel and remove the seeds of the butternut squash. Cut into 1-inch cubes. Rough chop the kale. On a sheet pan, add the butternut squash cubes and drizzle with olive oil. Add salt and pepper to taste. Top with sprigs of thyme. Roast for 30 minutes. Check and toss halfway. In a medium skillet, heat 2 tablespoons of olive oil over medium-high heat. Add kale, salt and pepper, and sauté for a few minutes until softened. Remove from heat. Prepare the pizza dough according to package directions. Brush with olive oil from edge to edge. Bake for 8 minutes. Removed from the oven, layer 2 cups of mozzarella cheese, goat cheese, sautéed kale and ½ the roasted butternut squash (save the rest for another dinner). Bake for another 10 minutes or until cheese melts and crust turns light golden brown. Top with red pepper flakes and lemon zest. Enjoy!
